
Kebab also known as kabob, kebap, kabab, kebob is a dish of pieces of meat, fish, or vegetables roasted on a skewer or spit. Originally it is from Middle East but nowdays kebab could be found all around the world. Shish kebab and doner kebab are two the most popular types of kebab.
Doner kabab consists of a skewer with small pieces of meat or seafood, together with vegetables such as onions, tomatoes and bell peppers while shish kebabs are customarily prepared in homes and restaurants. Shish kebabs are usually cooked on a grill or barbeque. In English-speaking countries the word kebab is also used generally for döner kebab,or the related shawarma or gyros. Prepering kebab is an interesting thing because we can see many layers of meat are stacked onto a large vertical rotating spit; the outer surface is gradually cooked and sliced off, and typically served as a sandwich in pita or flatbread with salad and sauces. In Germany official name for kebab is döner, accepted from Turkish immigrants. In Arab word they call it shawarma while in other countries in Europe and worldwide, the name used depends on the dish and on local customs.
The traditional meat for kebab is lamb, but depending on local tastes and religious prohibitions, other meats may include beef, goat, chicken, fish, or, more rarely, pork. Here we will mention just some of national varieties.
China
Chuanr (Chinese: 串; pinyin: chuà n), often referred to as “chua’r” throughout the north, or kawap (كاۋاپ) in Uyghur,
is a variation of kebab originating from the Uyghur people in the western province of Xinjiang and a popular dish in Chinese Islamic cuisine. Although the most traditional form of chuanr uses lamb or mutton, other types of meat,
such as chicken, beef, and seafood, may be used as well. Small pieces of meat are skewered and either roasted or deep-fried. Common spices and condiments include cumin called “ziran”, pepper, sesame, and sesame oil.
India
Modern day kebabs in India trace their origin to the influence of the Mughlai cuisine in India. Some varieties of kebab in India are more or less similar to other kebab preparations along with their distinct taste,
which can be credited to the use of the Indian spices.
Turkey
In Turkey there are many varieties of kebab such as Shish, Cağ, Döner, Adana, Steam kebab, Testi kebab etc.
